Chemical Analysis of Malatya Region Walnuts (Juglans regia) with ICP-MS, GC-MS, FITR and SEM-EDX

Özet

In this study, walnuts grown in Malatya Hekimhan andDoğanşehir districts were analyzed. Walnuts are quite rich in terms of oil, protein, vitamins and minerals. The oils of the samples were extracted with the cold press technique and saturated and unsaturated fatty acids such as palmitic acid, oleic acid, linoleic acid, α-linolenic acid, and stearic acid were analyzed with GC-MS. Qualitative analyzes of organic and inorganic substances in walnuts were performed with FT-IR. In the element scan performed in SEM-EDX, an average of 96% C and O were found, while other elements Mg, P, Al, K, S, Ca were found in the remaining 4%. Elemental analysis was performed in AAS and ICP-MS by solubilization with microwave extraction method. Zn, Mg, Se, Cu elemental levels were examined with AAS. The analysis results of Na, K, Ca, Fe and Mn elements of in 2021 and 2022 were compared with ICP-MS. It was observed that if walnuts were stored in their shells, there was no change in their chemical structure. According to the analysis results, it was determined that walnuts contained esters of fatty acids that are responsible for different functions in the human body and provide high energy to the body, that they contained elements that are important in the biochemistry of living things, and that they did not contain heavy metals.
